Banana Hotcakes with Honey Pecan Butter




















A Delicious Change of Pace Hotcake!

1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/8 teas. ground nutmeg
2 Tbsp. sugar
1 egg
1 cup milk
3 Tbsp. salad oil
1 cup ripe mashed bananas
2 tsp. lemon juice

Stir together flour, baking powder, salt, nutmeg, and sugar.

Beat egg with milk in a large bow. Beat in oil, the bananas and lemon juice.

Add flour mixture and stir just until combined. (It will be a little lumpy)

Use 1/4 cup batter per pancake on a hot greased griddle.

Honey Pecan Butter

Spread 1/3 cup pecans in a shallow pan and toast in 350 degree oven for about 8 minutes. Cool completely and then chop fine.

In a medium bowl, beat 1/2 cup softened butter or margarine until fluffy and then add 1/4 cup honey until well combined.

Mix in cooled pecans and ENJOY!
